Paul was the 5th child of seven kids born in Naples, Italy, where his Mom cooked—and still cooks—amazing traditional Italian food. Paul’s background has instilled in him the importance of freshness and fine ingredients and the desire to make every plate he serves as wonderful as possible.
He started out in the business back in Italy learning the art of pizza making. In 1990 he came to America and owned his first restaurant in New Jersey before coming to Cary. Paul learned the pleasure of sharing homemade, good, fresh food with his whole family at the table, and he created Lubrano’s in Cary in 2002 to bring this experience to you.
Today, Lubrano’s has rebranded to Paolo’s – though still is celebrating the flavors of nightly specials such as Lobster Ravioli in a light vodka cream sauce, as well as the beloved hand-tossed pizzas. We offer some new dishes we’re sure will become favorites along with a wide variety of fine wines.
